Tuna Noodle Casserole

I didn’t save the recipe and I’ve deleted the recipe on my Pinterest Board because I didn’t care for it. The penne was hard because you had to bake it and the tuna overpowered the sauce.IMG_4744

Beefy Cheesy Tortellini Bake

This was really good and I will definitely make this recipe again.


Next I made Pesto Alfredo Tortellini with smoked sausage….I’ve been on a tortellini kick. The recipe is from Belle of the Kitchen’s Pinterest page.



I tried a Philly Cheesesteak Casserole in the crockpot and it was ok.

The latest recipe I tried was Crockpot Fajitas and it was delicious! I added sour cream and guacamole to mine. I got it from Family Fresh Meal’s Pinterest Page and it was really easy!

Chili Cheese Hotdog Caserole!

It’s very good and bad for you at the same time especially if you add more carbs as a side, which I did.


Ham and Cheese Tortellini 

This was ok. The ham flavor wasn’t strong and the cheese seemed to clump in certain spots.

Chicken Crescent Roll Casserole

This was delicious, easy, and I’ll definitely make it again.

I used rotisserie chicken and the recipe calls for crescent rolls, can of cream of chicken soup and shredded cheddar.

Here is a recipe from our Fit Kids Kitchen (@fitkidskitchen on Instargram) dedicated to creating yummy meals and treats the kiddos will even enjoy. For the adults, this can be a great post workout carb treat to enjoy!

Prep time: 10 minutes

cook time: 35+ minutes

servings: 8 slices



  • 4 overly ripend bananas mashed
  • 1 egg
  • 1/2 cup chopped walnuts


  • 1 cup rolled oats
  • 1/2 cup whole wheat flour
  • 1.5 scoops Quest Vanilla Milkshake protein powder
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/4 cup honey
  • Couple of dashes of cinnamon
  • Couple of dashes of pumpkin spice


Preheat oven to 350 degrees.

Mash bananas in food processor. Add egg, vanilla, honey and mix well. Stir in dry ingredients and seasonings. Lastly, fold walnuts in. Bake in prepared bread pan for 30-35 minutes until tooth pick comes out clean.

Quick Tip to keep bread from drying out!

Protein Fruit Dip

This is pure heaven. It’s like a cheesecake fruit dip. Spread this on just about anything! Any fruit, banana bread, waffles, pancakes, you get the idea!



  • 1 cup low fat cottage cheese
  • 1/2 scoop Quest Vanilla Milkshake Protein Powder


  • Blend in food processor until smooth! Then devour!

Weekly Recap #7


I needed to use my Petco rewards before they expired and they had double points on Leaps & Bounds toys so Phoebe got a Park Ranger Moose 🙂 I love their whole camping woodland creatures theme!! I wanted to get her the s’mores toy but it was about as big as she is so that was a no go.

My friend, her husband, and I finally tried the new Manola Fajita Factory. It was good but I can’t say the same for the margaritas. 

Pineapple Fajita


 Phoebe was lacking motivation and so was I.

     My little guard dog was growling and barking at an unknown intruder lol.

A wren family has taken up residency in my bird house

I’m so happy my wisteria has bloomed and for my pug model.  

Sunday morning was a beautiful  morning to have coffee outside.

My friends and I went to the new Cuban place and oh my gosh do they give you a lot of food!

I wanted to get a Cubano sandwich but I felt that was playing it too safe so I went with the Chicken Milanese, which is their version of Chicken Parmesan. It came with black rice and plantains neither of which I have ever had. I normally hate rice but I actually liked the black rice and the plantains.

My friends got Imperial Rice that serves 2 but actually could serve 4!! It has yellow rice, sweet peas, ham, mayonnaise and a cheese top. I tried a few bites and this was delicious as well! I’ll definitely go back!

For dinner I made Cheesy Sausage Tortellini, garlic bread, and crescent rolls filled with Cadbury caramel eggs!

I found out after I had already started making the crescent rolls that I was supposed to use the regular caramel eggs but I used the minis. They were good but there was more crescent roll then chocolate and caramel. Next time I’ll use the correct ones lol.
